Avocado is rather a unique type of fruit as it is healthy in fats, unlike most fruits that consist primarily of carbohydrate.
Numerous studies show that it has powerful effects on human health.
Most people might actually not find it nice to eat this lovely fruit bare, but the good news is that there are several ways to combine it with foods such as bread and salad to make its consumption pleasing.
Below are steps to make a colourful and healthy avocado salad;
Ingredients for Shrimp Avocado Salad:
1 lb (3 to 4 medium) fresh tomatoes.
1 English cucumber.
1/2 medium red onion, thinly sliced
2 avocados, peeled, pitted and sliced
1 cup of sweet corn
2 Tbsp olive oil
1 medium lettuce (5 to 6 cups chopped)
2 Tbsp of lemon juice.
¾ tsp of table salt
1/8 black pepper
1 large raw shrimp
2 cloves of garlic.
1. Marinate shrimp with lemon juice, 1 tsp spice, 2 grinded garlic cloves and a pinch of salt.
2. Heat a large non-stick pan over medium-high heat. Put in 2 Tbsp oil, once oil stops sizzling, add shrimp in a single layer and fry for about 2 minutes. Flip shrimp over and fry until it’s fully cooked. Don’t overcook shrimp or they can become rubbery. Remove to a plate and set aside to cool.
3. Chop, rinse and spin dry the lettuce. Line the bottom of a large salad platter/bowl with 5 to 6 cups of chopped lettuce. Add remaining ingredients in rows over the top of the lettuce such as, chopped tomatoes, sliced red onion, sliced cucumber, shrimp, avocado and boiled or grilled corn.
4. Ready to serve.
