There is nothing like fresh tomatoes in season even though there are high-quality canned tomatoes and sun-dried tomato paste in the market.
Tomato is one of those delightful food that is not only tasty but also good for your health.
It is low in calories and has no cholesterol. It is high in Vitamins A and C, and a good source of potassium. It is also rich in antioxidants such as lycopene that nutritionists believe helps to fight cancer and heart diseases.
Sometimes, tomatoes are out of season and scarce in Nigeria. The ones found in the market are usually very expensive and most times not affordable.
Here is a recipe on how to make a delicious stew with a little amount of tomatoes:
6 pieces of tomatoes
1 ball of red onion
3 pieces of red pepper
3 cloves garlic
1 tbsp minced ginger
Salt to taste
Slice your tomatoes, pepper, onion and vegetable.
Heat the olive oil over medium heat, add the chopped tomatoes, pepper, onion and turmeric allow to cook for approximately 4mins.
Add the ginger and garlic to the pan and cook for 1min more.
Add the smoked fish to the pan.
Finally, add the vegetable and cook for 3-4 mins.
You can serve the stew with rice or any swallow of your choice.
